And American cuisine never failed to turn up a bunch of new ideas.
Some are misses
But some have been hits.
Jell-o poke cake was one of those recipes that always went down a treat at camp or special meetings.
I decided to try my hand at a red/blue/white Jell-o (jelly) cake for Australia Day.
I have to say, in my attempts to make it neater, I just made it messier.I tried to poke smaller holes than normal, hoping it would look cooler. But that just made the jelly more inclined to soak into the cake instead of sitting in the holes. My second attempt was much better but I didn't photograph that one.
But definitely give it a go yourself.
Bake a 'white' cake
Let the cake cool, then poke it all over (don't use a skewer like me, use the handle of a wooden spoon or a clean finger)
Meanwhile, make some jelly in red and blue. Let it get halfway set so it's still pourable but kind of thick
Spoon on top of the cake, gently run a spoon over the cake to push the jelly into the holes. Quickly get the cake into the fridge and leave it for a couple of hours so the jelly sets fully.
Ice the cake. On my second attempt I also added blue sprinkles and little Aussie flags.
Slice into the cake and enjoy. With larger holes you get more defined 'veins' of jelly. But this one was still tasty and still looked pretty cool!
You could also make a yellow cake with green jelly!
My pointers:
- BIG holes
- Let the cake cool and the jelly half set
- Straight into the fridge to finish setting
